Cous cous with Vegetables

Couscous is a North African dish, usually offered with stewed meat or vegetables. There also are versions of Fish couscous or a very delicate one just with herbs.... This dish is very versatile! Play around and you will find your favourite one.
Today I prepared my couscous with vegetables and spices to create a perfect Arabic taste... 


INGREDIENTS: 
Servings: 4

1 glass instant couscous
1 small eggplant
2-3 small zucchini
2 handful fresh fava beans
1 medium tomato
1 carrot
1 medium onion
2 garlic cloves
3cm ginger root
fresh parsley
fresh basil
salt 
chilli powder
1.5tbs curcuma
1/3tbs cumin seeds
EVO oil
1 1/3 glass water + 1/4 glass 
 

 
1. Cut eggplants into 1.5-2cm cubes, salt them and let them release their water in a bowl.
Usually it takes about half an hour to have the eggplant quite wet.


2. Slice carrots into wheels or half wheels if the carrot is too thick.
3. Cut zucchini into wheels.
4. Cut onion into 4 parts and then slice it finely.


5. Heat 5-6 tbs of EVO oil in a frying pan with a squeezed garlic cloves and grated ginger.
6. Add 1tbs of curcuma, cumin seeds and stir well. 
7. When you start filling a nice smell, add carrots and onion, cook at a low heat till the onion starts getting transparent.

 8. Squeeze eggplants to remove their water and add them and zucchini to the pan, continue cooking at low heat covered with a lid till they become coloured.
9. You may salt veges now or any time you want, but not at the very end. 

10.  Clean fava beans and remove them from the pods and peel the skin.
Note: Some people don't bother peeling fava beans, I personally don't like it, as I found the skin a bit hard.
11. Add fava beans to the pan and cook for some more minutes. 
Note: You may add 1/4 of water to cook the veges better. 


12. At the end add tomato cut into small cubes, stir the veges well and cook till all of them are completely ready.

13. Chop fresh parsley and basil finely.
14. Mix couscous with chopped herbs and 0.5tbs of curcuma, some chilli to your taste.
15. Boil a bit less than 1.5 glass of water, melt some salt in it, add 1 tbs of oil and pour it over the couscous.
16. Cover the bowl with couscous with a lid and let it sit for 10 minutes.

17. Using a fork stir couscous in order to separate the graines of it.  
Note: The grains of couscous tend to stick one to another during the cooking process so you need to fluff them carefully.

18. Arrange cooked couscous over a presentation dish as a doughnut and add stewed vegetables inside the ring.

Rice Noodles with Vegetables and Shrimps

This recipe is not a typical dish of the Asian cuisine... My dear Asian friends, please forgive me if I did something wrong.... This is just my way of cooking the wide rice noodles. 
This recipe is fast to prepare and it's also really healthy. If you use the wok pan to cook, it will also be a low-cal dish as the use of woke reduces the use of the oil. I personally adore the wok cooking!!! I always use it for stir frying and for deep frying as well...  


INGREDIENTS: 
Servings: 2 

150-160g wide rice noodles
1 zucchini
1 carrot
6-8 mushrooms
1 handful of soy beans sprouts
100g shrimps 
2 garlic cloves
1 tbs fish sauce
1 tbs soy sauce
1 tbs grated ginger
vegetable oil 

Note: You may substitute some veges for the others if you like them better...


1. Soak the rice noodles for 5-10 minutes or as it's indicated on the package.
 
2. Peel the carrot and wash a zucchini. Cut them into thick sticks, I do it with the use of a Mandolina grater.
3. Slice mushrooms finely.
4. Pour 3-4 tbs of any vegetable oil to the WOK pan and heat it up over the high heat.
5. Stir fry the carrots for a couple of minutes.
6. Add mushrooms and fry for a couple of minutes more.
7. Next it's zucchini's turn to be cooked for two more minutes.
Note: Keep stirring constantly as cooking in wok requests stirring!!!


8. Add the soy bean sprouts and shrimps and stir.

 9. Drain the noodles and add them to the wok with vegetables.
10. Squeeze garlic cloves, grate ginger and add them to the noodles.
11. Pour 1 tbs of each soy and fish sauces. Taste the noodles and if needed add some more soy sauce for saltiness

Desert Roses - Corn Flakes and Almonds Gingerbread

The original name of these biscuits is "Desert Roses", they perfectly look like the crystals that can be found in the desert areas and have the same name... 
I know so many people who buy Corn flakes because they want to have healthy breakfast... but then they don't eat them as the corn flakes turn out to be insipid. What happens then with the poor corn flakes' box? Stays forever in a sideboard! Don't keep it there, make some biscuits!!! These biscuits are perfect for the breakfast or as a healthy snack with some yogurt. They are quite substantial but yummy, so don't overdo!!!
 
INGREDIENTS:
Servings: 25-30 biscuits



150g butter
2/3 glass sugar
2 eggs  
100g almonds 
1glass flour
2 glasses corn flakes
1 tbs baking powder
1 tbs ginger powder
1 pinch of salt
+ 2 glasses of corn flakes for breading


1. Chop almonds with 2 tbs of sugar with a blender to get a rough flour.  



2. With the help of a mixer whisk butter with the rest of sugar.
3. Add the eggs to the butter mix and whisk again.


4. With a spatula or a simple table spoon mix the almond flour into the butter-egg mix.

 
5. Sift the flour with baking powder and ginger.
6. Add flour to the batter and mix well.


7. At the end add 2 glasses of the corn flakes to the dough.
Note: I advise to crash the corn flakes with the hands to have smaller bits.  

8. Put a glass of corn flakes in a shallow plate.
9. Take a tablespoon of the dough and put into the corn flakes. Try to cover the biscuit with the flakes
Note: If the corn flakes are too big, crash them a bit. 
10. On an oven tray covered with the oven paper, outdistance the biscuits as they are going to get wider while baking.


11. Bake the biscuits at 180C for 15minutes, till they become slightly brown.


12. Serve the biscuits with the icing sugar generously sifted over.
Note: Keep the biscuits in a tight container to preserve crispiness.

Spicy Cake with Chocolate Icing and Orange Marmalade

One thousand and one nights tales - have you ever heard about Aladdin or Ali Baba?.. Spicy and fluffy, this cake will become a perfect treat for those who have ever visited a market of spices ... You will be very surprised to find mayonnaise as one of the ingredients but the taste will reassure you... And what to say about the home-made Orange marmalade? 
This cake is not simple to prepare as we need two different fillings and an icing.
  
INGREDIENTS:
Servings: 8

Cake: 
2 eggs
1 glass sugar
0.5 teaspoon ginger
1 teaspoon cinnamon
200g mayonnaise
1 teaspoon baking soda
1.5 glass flour

Icing:
100g chocolate
100ml cream

Orange Marmalade:
4 oranges (about 900g)
1.5 glass of sugar
25ml rum 


Custard:
3 egg yolks
100g sugar (5 tbs)
30g flour (3tbs)
300ml milk (1.5glass)
orange zest
 

First we prepare Orange Marmalade:
1.Wash the oranges with some soda as we need to use the zest as well.
2. Peel the orange skin of 1.5 oranges, just the part of orange colour. You may do that with the vegetable peeler that takes away just the upper layer of the peel.
3. Slice the peel into really thin stripes.

4. Peel the oranges with the knife to get rid of the outer membrane
5. Cut the orange segments out of the membranes, it's quite a toilsome task but think of the result and you'll be fine!!!


6. Keep the membranes aside and squeeze them through a sifter.
7. Add 1 glass of sugar to the juice that you squeezed and melt it over medium heat.


8. Add the orange peel stripes and cook them for 5 minutes. Switch off the heat and put the pan aside for 10 more minutes.

9. Add orange segments and 0.5 glass of sugar to the syrup and cook it for 40 minutes at a medium heat.
10. From time to time take away the foam that will appear and stir the marmalade.
11. At the very end add 2 tablespoons of rum and switch off the heat.
12. As you haven't prepared a big quantity of the marmalade so you may refrigerate it for some days, don't worry it won't last long.... It is absolutely perfect for breakfast! 
Orange Marmalade is a fragrant filling for various cakes and transform even a plane one into a fine pastry masterpiece....
But for those lazy-ones: you may always buy a jar of orange marmalade in the supermarket....

Custard: This recipe is just for this cake. Usually they use a vanilla bean and lemon peel instead of orange peel.


1. We have already prepared the orange peel but for those who use the ready marmalade, peel just the orange part of the orange skin with the use of a vegetable peeler.
2. Heat the milk with the orange peel, but don't bring it to boiling. Use a thick bottom sauce pan for that. Keep the milk with the peel for 10 minutes to flavour it.

3. Whisk egg yolks with the sugar to a white foam with an electric mixer. You may do that with a hand whisk but then you need too much time and muscle work...
 
4. Sift the flour and mix it in with a hand whisk.
5. Add half a glass of milk and mix well.
6. Take the orange peel out of milk.
7. In the same sauce pan with the milk, whisk in the egg mix.

8. Over a medium heat, whisking vigorously, bring the milk and egg mix to boiling. It will thicken. Here we go: our custard is ready.

9. Transfer the custard to a bowl and cover it with plastic film making sure you stick the film to the custard surface. It will prevent it from the forming of the lumps ... Wait till the custard is cold to use it.            
 

Now it's turn to prepare the cake layers
 
1. Whisk eggs with sugar just for a couple of minutes. You don't need to use a mixer for.
2. Mix mayonnaise into the eggs.


3. Sift flour together with the baking soda and all the spices.
 
5. Whisk in flour little by little to the mix of eggs and mayo. The batter should be medium thick.

6. Prepare the cake pan: spread half a teaspoon of refined oil over the pan's bottom and sides.

7. Divide the batter into three parts and cook each layer of the cake in preheated oven at 250C for 7-8 minutes.
 

8. Make sure you clean the pan after each layer.
9. Cool the layers over the cake rack.



Let's melt the chocolate:

1. Break chocolate into piece, put it into a sauce pan together with the cream.





2. Melt it over a low heat stirring constantly.






Let's arrange our cake finally.


1. Spread orange marmalade over the first layer.
2. Spread some custard over the marmalade and cover with the second layer. You may also spread the custard over the second layer, then turn it over and put custard on top the marmalade.

3. Repeat for the second layer, same: marmalade and custard.
4. You will  still have some custard left, but you will need it later.

5. Spread the melted chocolate icing over the third layer, keeping couple of tablespoons of the icing.

6. Mix custard with the chocolate.
7. With a use of a table knife (the one that doesn't cut) cover the borders of the cake with the chocolate custard.
I used a fancy cake form, so this stage was really laborious... But if you've used a plane round cake pan it will be like a piece of cake.... nice pun, huh? :-)

8. Decorate the cake with some orange peel and keep it in fridge.
