Herbs-stuffed Mackerel - Sgombro al Cartoccio


Healthy, easy and tasty. These are the adjectives for the oven cooked Mackerel with herbs. 
Mackerel is a source of the famous Omega3 fatty acids, great for the heart-health. 
This fish is also quite cheap that is also an important point to it's favour. 

 


INGREDIENTS:
Servings: 2

2-3 mackerels
2-3 rosemary sprigs
4-6 sage leaves
1 bay leaf
parsley
salt 
EVO oil   


1. Clean the fish.
2. Salt it inside and outside.
3. Put the herbs inside the fish's belly.

 
4. Wrap each fish in aluminum foil and pour some olive oil inside the "package".
5. Cook the fish in the oven at 220-250C for about 30 minutes.

6. Serve with some lemon squeezed over.
